Gar nicht. Courier hat die facility "mail.*" hardcoded.
Meine Lösung:

in /etc/syslog.conf:
local4.*                        -/var/log/mail.log
mail.*                          -/var/log/pop3d-imapd.log

in Postfixs main.cf:
syslog_facility = local4

gut, ne?
