[Trennmuster] hyph-de – welche Datei brauch ich wirklich (aktuell)?

A regular user should not bother about these. They are just loading
the right patterns for the right engine in the right encoding.

(Well, except for the Germans where one might want to replace loading
the old patterns with loading the new ones for pdfTeX. If you just
want to use the latest hyphenation patterns instead of the old ones,
you could use hyphsubst [see below] or modify loadhyph-de-1901.tex or
ask the others when/if it would be appropriate to switch to the new
patterns by default.)

These patterns are currently only used by pTeX, but one could use them
in pdfTeX and other 8-bit engines if needed. They are EC-encoded and
auto-generated. (It might happen that they will be used by 8-bit
engines in future by default.)

If you are using pdfTeX or XeTeX, these are the patterns of interest
(except for German where it is only for XeTeX). If you want to
modify/replace patterns, these are the files that you should be
looking at. If you need "TeX-Trennmuster für die traditionelle
deutsche Rechtschreibung" then hyph-de-1901.tex is the file that you
should be looking at.

These files are relevant if you are using LuaTeX which is loading
patterns on demand. These are "plain text" files with patterns and
exceptions. They are all auto-generated.

So: I believe that you should be looking at hyph-de-1901.tex, but then
again - you forgot the whole dehyph-exptl package, see:
    http://ctan.org/pkg/dehyph-exptl
If you want to experiment, take a look at the documentation of
dehyph-exptl and how you can use the package hyphsubst.

Btw: if you install TeX Live 2013, you'll get the latest German
patterns both with dehyph-exptl and hyph-utf8 (only not by default in
pdfTeX).
